There are 2 main players in pressure cooking games: traditional stove top and electric. A traditional pressure cooker sits on the stove top like a regular pot. You can control the heat like any other pan. You can grill meats and vegetables, then add liquid and seal over the top to cook. You can control the pressure inside the pot by adjusting the heat on the stove and watching the gauge at the top show the pressure level (high or low).

Electric pressure cooker
An electric pressure cooker has its own heat source, it works like a slow cooker (many electric pressure cookers also have a slow cooker function), and usually has a variety of preset settings you can choose from for different foods. You can push a button and the whole thing will run itself and adjust the pressure.

Each option has advantages and disadvantages. The stovetop variety heats up faster and has less overall cooking time, but I also feel like I have to take care of the pot and adjust the heat constantly. While the electric style takes longer to heat up, I like the ease of walking away at the push of a button. You also have more control over the heat on the stove top if you want to brown vegetables, roasts, etc. before pressure cooking. Having said that, I'm impressed with the high heat my Electric Instant Pot uses for stir-frying. It's hot. Stovetop models vary in size and are generally larger in capacity than electric models, which are typically 6 quarts. However, I have yet to make my 6 qt pot feel too small to cook anything.
